Apple Cider Spice Cake, another winning Pinterest recipe. This Apple Cider Spice Cake has many things to love … fresh apples, hand pressed apple juice, a dense texture and a wonderful spice taste. You can’t help but to feel like you’re experiencing the wonders of fall … even if it is 91 degrees outside. 🙂 Yum!
This Apple Cider Spice Cake recipe calls for 7 Gala apples. Well, you know the local small town grocery store isn’t going to have Gala apples, so since my husband was picking them up for me on his way home from work, I said just go with something red. And these beauties are what he brought home. Well, 4 of them since I’d already cut up the other 3 before even thinking about a photo op with my new camera.

Anyway, back to the cake. You know I have a thing for textures and this cake doesn’t disappoint. It’s a very dense, moist and flavorful cake. It’s not up there with my Yummy Pumpkin Muffins, but it is good. Especially after you let it set for 24 hrs. I think that is key for this cake. It needs time to meld all those flavors and absorb all the goodness of the two toppings that you add to it.
In this photo, you can see the bits and pieces of grated apple. And it also reminds me of the two things I’d change when baking this cake again … and this recipe is definitely going in the keeper file.
The first thing is the recipe calls for unpeeled apples. Because of this, my first bite of this cake wasn’t my favorite … since textures are my thing. I really didn’t like the “raw” texture of it due to the apple peelings, although I know that’s where a lot of the apple goodness resides. But once the cake sat for 24 hrs, this was no longer an issue. I could no longer distinguish the peelings from the rest of the cake and there was no “raw” texture. And by raw I don’t mean not done, I mean in the way of being crunchy vs moist. So I’d definitely peel the apples when making the cake again.
The second thing I’d change is the amount of the “drizzle” that ends up on the plate vs on the cake. Even on the plate, you can still scoop it up and add it to the cake as you serve it, but I’d like a thicker drizzle to stay atop the cake to begin with. So I’d have to adjust the amount of sour cream added to the confectioner’s sugar to make a drizzle with a thicker consistency.
I made the Apple Cider Spice Cake on a whim since I was going up to visit my dad. I know now where I got my sweet tooth from. So I try to take him something yummy up when I visit. And I’m sure this cake will freeze well. We try to keep his freezer stocked with all kinds of homemade meals and yummy goodness.

So this is a Pinterest recipe that I’d highly recommend for it’s goodness, but before I do that, I will say it isn’t for the faint of heart. Or maybe I should say for those who are looking for something short and sweet. Ok, it is sweet, but you know what I mean.
It’s not a hard recipe to follow, it’s just not short and easy … mainly because you have to peel 7 apples (if you chose to do that), grate them (I used a food processor for this part instead of a hand grater) and then hand press the juice from the apples. So now you see what I’m talking about.
The good thing was after I finished hand pressing that particular kind of apple I had plenty of extra apple juice left over for other projects. So I divided it into two containers and that went in the freezer for later. So there is a plus side to all that apple business … just sayin’.

omg, I just realized I left the nuts off the top of the cake! And I was thinking today, nuts might be good in that cake. Sometimes I surprise myself with some of the things I do (or don’t do). Ok, I surprise myself ALL the time, but don’t tell anyone! I like to keep that kind of stuff to myself. It’s kind of like eating standing up (no calories) … if no one knows, it didn’t happen!
